If I just use Outlook and not Exchange can I log onto my account from any computer, while away from the office, to check my emails and make changes to my schedule?

Jen,
You can use technologies like PC Anywhere, GoToMyPc, and Terminal Services. Those software packages basically show you screen shots of your computer at your work from remote locations. Another option would be for you to login to your Internet Providers email web portal, but there you most likely will only see new email, and not your sent items, your received items, tasks, and calendar like you could if you had Exchange running and viewing the special web portal.

I've worked with Terminal Services before. It works fantastic! You just have to make sure you have a solid Internet connection.
Cheers!
